Complimentary Wine Tasting & Cheese Pairing

Our complimentary tasting will include Sancerre Le Mont 2010 as well as Orin Swift Abstract 2010.  The Sancerre is incredibly fresh and mineral. It has good depth, lovely, citrus fruit, and a classic flintiness on the nose and palate. The wine comes from the villages of Sancerre, Chavignol (near “Monts Damnés) and d’Amigny. The wine was aged on its lees in stainless steel for 10 months before bottling.    The Abstract is a blend of Napa, Sonoma, and Mendocino Grenache, Petite Syrah, and Syrah primarily from hillside vineyards. The aromas are laced with crushed black fruits and Bing cherry. A mouth coating entry leads nicely into a mid palate with excellent structure and balanced acidity. Ripe cherry and strawberry dominate the finish, which is clean and long.  Very low over all production, this wine won’t be available again until next fall.   From C'est Cheese, with the Abstract, we will be pairing a Grafton Village Reserve 2 year aged Cheddar.  From one of the most impressive creameries in Vermont, unpasteurized cow's milk, the perfect balance of creamy and crumbly texture and a sharp bite make it well suited to pair with the abstract.  The Beemster Goat Gouda is a goat's milk cheese from the Netherlands.  Its smooth texture and tangy, nutty flavor profile is a perfect match for Sancerre.
